Nancy prides herself, her staff, and her food on sourcing ingredients locally whenever possible and very quickly forged many partnerships with local farmers who provide her the freshest foods – truly from their farm to our tables. Supporting the local farms strengthens the local economy and provides the freshest of produce allowing Nancy to put her touch to familiar classics as well as international and seasonal dishes with the highest quality produce. It’s those fresh, healthy foods that are the starting point for all of her dishes inspired by the fruits and harvests of the season. Nancy excels at crafting something completely unique, changing the perception of a vegetable then matching it with the best cut of a protein to design a sophisticated, delicious entrée that bursts with flavor, texture and beauty.
In the summer and fall, herbs come straight from the Café’s gardens directly to the kitchen! Preserving the herbs in pestos and oils extends the Café’s herb use into the winter.
